Perched on the limestone plateau just west of Dijon, Marc Soyard is the young vigneron breathing life back into the city’s forgotten vineyards. Having trained under Jean-Yves Bizot in Vosne-Romanée, he brings the same philosophy of patience and precision to his own estate — the only vineyard owned by the city of Dijon, entrusted to him in 2013 to preserve its viticultural heritage. Working organically and biodynamically, Marc vinifies with native yeasts, whole clusters and minimal sulphur to craft wines that are pure, energetic and profoundly mineral.
