Paul Girard brings together two historic Champagne lineages — the Girard family from Le Mesnil-sur-Oger and the Bonnet family from Oger — to revive a legacy in his own name. With 12 hectares planted in Grand Cru (Le Mesnil & Oger) and Premier Cru (Vertus), he farms organically and biodynamically to honour the earth. In the cellar, the wine is vinified parcel-by-parcel in a mixture of stainless steel, oak barrels and amphorae, with native-yeast fermentation, extended lees ageing and no fining or filtration.
